A European-Inspired Grazing Table: What Makes Ours Different
In recent years, Utah brides have been adopting a European-inspired trend book for their weddings across all seasons. Some brides are taking inspiration from Italy, hosting multi-day celebrations which span over weekends. Others are sneaking in homages to France by hosting intimate gatherings in backyards, under the eye of minimal florals and elegant tents. It is no secret Utah is catching Europe fever, and this is for good reason. Utah brides are leaning toward the slower, more intimate wedding, opting to trade shorter guest lists for heightened luxury.
Inspired by my travels across France, I wanted to bring the highlights of my trip to my most recent charcuterie grazing table. Over several weeks, I worked to curate a menu which would represent my voyage to the Coté d’Azur within five and a half square feet. When I think back to the French Riviera, lavender swirls my senses before I transport to the coast of Cannes, salty air in my lungs with a warm, fresh-baked baguette in hand. Fresh tuna tartare and tomato salad paint my tastebuds with their flavors, leaving me with a sweet taste on my tongue.
As always, when sourcing ingredients for grazing tables, I knew I want them to be as local as possible — this time, it was even more important, so I began searching. During the weekend prior to creating this table, I scavenged across the Salt Lake and Murray farmer’s markets in search of plump, colorful heirloom tomatoes. While at the Salt Lake Downtown Farmer’s Market, I purchased several pounds of locally-churned butter, and chèvre infused with Herbes de Provençe and edible flowers.
I then left the bustling Farmer’s Market to explore my favorite local shops and grab some of my go-tos for each French-inspired table I curate. Caputo’s Market, courtesy of a local bakery, before I went next door to Carlucci’s Bakery to grab a baguette and a few pains de chocolat. In creating this table, I was extremely fortunate to team with a local bakery based in South Jordan, Sweet Bites, to collaborate on curating a perfect macaron variety to bring a pop of color to the otherwise naturally hued table. Alongside sourcing ingredients from local farmers and artisans, I reached out to local flower farmers to get an overabundance of freshly-cut lavender.
To ensure peak freshness and quality, I always source seafood and charcuterie (in this case oysters) on the day-of each event. Unfortunately, Aquarius Fish Market in Salt Lake City was closed the morning of this event, so I opted for Whole Foods — an equally high-quality, but less local, oyster source.
This table wasn’t just about curating flavors—it was about creating a feeling. I wanted it to capture the kind of atmosphere you find during a long summer evening in the French Riviera: relaxed, sun-warmed, and just indulgent enough to feel special. Every detail on the table was chosen to reflect that pace and elegance—each bite rooted in memory, designed to linger. When I talk about European-inspired grazing tables, I’m not just referencing the ingredients. I’m inspired by the way Europeans gather: slowly, intentionally, and always beautifully. I wanted this table to reflect that experience—to invite people in, to give them a reason to pause.
This table, like every one I create, was more than just a display—it was a love letter to slowing down, to thoughtful details, and to the beauty that happens when local ingredients meet global inspiration.
